Ingredients; Rice ( thai, basmati, ofada or tomato), fresh tomatoes, pepper (red and green bell, cayenne, bonney), onions, garlic, turmeric, carrots, green beans and peas, spring onions chicken breasts and drumsticks, olive oil, thyme, raw eggs, table salt and suppyseasoning.
Directions; Parboil rice, marinate chicken with salt, suppyseasoning, garlic, turmeric and onions overnight in a refrigerator and cook for 5 minutes without water. Add a little water (the water will form a tasty stock which will be used later for the stew) and allow it to cook for 5 minutes. Drain the water into a bowl and grill chicken until it’s golden and crisp. Blend all fresh stew vegetables (tomatoes, onions, pepper and garlic) together and heat in a pot to evaporate excess water. Add in olive oil and stir fry until its colour darkens a bit. Add in the stock from the chicken, add in suppyseasoning and salt to taste and allow to simmer for 5 minutes. After washing the rice, cook in hot water, for basmati rice, mix in raw egg before cooking slightly to reduce the stickiness and improve its flavour. Chop all greens and carrot, stir fry in a pan under low heat for 3 minutes.
