Preparation; heat olive oil in a large pot over medium heat and add in sausages. Cook until it turns brown, then transfer to a paper towel to drain while leaving the oil in the pan. Add onions, bell pepper and celery to pot. Saute for about 6 minutes, add garlic and saute a minute longer. Add in the chicken stock, tinned tomatoes, paprika, thyme, oregano, cayenne pepper and suppy seasoning to taste. Stir in cooked sausage and rice. Bring mixture to a light boil over medium heat. Lower the heat, cover and simmer until rice is tender and the liquid almost dried up. Add in shrimps and cook for about 4-5 minutes. Stir in chicken, spring onions and parsley. Simmer for about 2-3 minutes over low heat and turn off the heat.
