Spaghetti & Meatballs
Christmas is just around the corner and we guess every recipe is a good addition! As always, we are here bearing delicious gifts! Making your holidays a memorable one, full of flavor. Spaghetti and meatballs is a dish of Italian-American decent made of mincemeat, tomato sauce and spaghetti as its main ingredients. We shall add a little twist to this mix; peppers! After-all we’re Nigerians and what are sauces/stew without peppers…we don’t want to know!
Ingredients; 250 grams mincemeat (beef or turkey), ½ can chopped tomatoes, 1 small scotch bonnet, 1 red bell peppers, 1 medium sized onions, 2 tablespoons tomato puree, 1 egg, 1 tablespoon breadcrumbs, 1 cooking spoon vegetable oil, 2 cloves of garlic, 1 tablespoon of chilli, ½ tablespoon of ginger, ¼ teaspoon of spices/herbs (oregano, thyme, curry, basil), 1 cube each of suppyseasoning beef and chicken cube and ½ teaspoon salt.
Directions; pour in a considerable amount of water into a pot and bring to boil. Add in spaghetti and allow it to boil for 8-10 minutes. Turn heat off, drain water and rinse out spaghetti to prevent strands from sticking together. Blend all fresh vegetables (preferably smooth) and set aside. Season mincemeat with afore mentioned spices and seasonings, mix ingredients evenly then add in beat egg with breadcrumbs and mix again. Roll your mixture into small balls and set aside.
With a little vegetable oil, a pan and low heat, fry meatballs until it changes to dark brown on all sides. Fry diced onions and garlic with tomato puree to take away the sour taste, then add in blended vegetable/pepper mix. Allow to simmer for a few minutes, then add in remaining spices and seasoning to taste. Stir periodically and add in the chilli with basil leaves. Add in meatballs, stir evenly and allow to cook for about 15-20 minutes. Pour in a little water into a pot, bring to a boil and add in spaghetti. Simmer for a few minutes, turn off heat and serve hot or cold!
