Homemade Shawarma
We are super excited to share this recipe with you! Sharwama which is originally a middle Eastern meal; made of flat bread, chicken (Turkey, lamb, goat, beef e.t.c) and vegetables, has become a favorite in most part of Africa, Nigeria inclusive. Have you ever searched for the perfect sharwama only to be disappointed at each turn? Not a nice feeling at all, with this recipe; we hope we’ll be providing a delicious solution to your sharwama problems!
Ingredients
For Chicken Marinade
• 500 g Chicken Thigh/breast (boneless)
• 1 Onion Red
• 2 Tbs Lemon juice
• 4 cloves minced garlic
• 1 Tsp Ginger Minced
• 2 Tsp Black pepper
• 2 Tsp Paprika
• 1/2 Tsp Nutmeg
• 1 Tsp Turmeric or curry powder
• 1/2 Tsp Thyme
• 1 cube Suppy chicken or beef seasoning.
• 1 Scotch bonnet pepper Minced
• 2 Tbs cooking oil
• Salt or to taste
For Shawarma Sauce
• 3 Tbs Ketchup
• 3 Tbs Mayonnaise
• 1 Tsp Cayenne pepper (optional)
Wrap & Vegetable mix
• 1/4 g Cucumber sliced into strips
• 4 to 6 Lettuce leaves
• ¼ g thinly sliced cabbage and carrots (optional)
• 4 to 6 Tortilla Wraps large
Directions
Marinate the Chicken – Wash and drain chicken. Add all the Spices to the Chicken and mix thoroughly then cover with a plastic wrap leave in the fridge for at least 30 minutes. Grill The Shawarma – place the Chicken pieces on a parchment lined baking pan, transfer to an oven and bake for 25 to 30 minutes on medium heat. Make sure chicken is well cooked then mix the Shawarma Sauce- in a bowl, stir the Ketchup, Mayonnaise, Suppy seasoning and Cayenne pepper together. Wash and slice all the Vegetable, spread a thin layer of the Mayonnaise and Ketchup mixture on the Tortilla wrap. Lay the vegetables and chicken neatly on the wrap, dabble some more sauce on the mix and roll it up. Place the wrap on a skillet or a grill and allow to cook for a few minutes.
