It is fun, easy and delectable! Chicken fajitas is a dish made up of grilled chicken and vegetbles that is usually served as a taco on a flour/corn tortilla. It’s originally a tex-mex (Texas-Mexico) meal, but now consumed in many parts of the world.
Ingredients; 1 lb of sliced boneless chicken breasts, ½ cup olive or canola oil, ¼ lime juice, ¼ teaspoon ground red pepper, freshly ground black pepper, 3 large thinly sliced bell peppers (preferably different colours) 1 large thinly sliced onion, 2 tsp. cumin, salt, garlic and suppy-seasoning cubes.
Directions; Whisk together olive/canola oil, lime juice and cumin in a large bowl. Season chicken with salt, garlic and suppy-seasoning cubes. Add seasoned chicken to the bowl and make sure each skin layer is coated properly with the mixture. Marinate in the fridge for about 30 mins or more (depending on how much time you can spare). With a tablespoon of oil on a pan and medium heat, cook marinated chicken for about 10 minutes or more, until it’s golden. Toss in bell peppers, onions and ground black pepper. Allow to cook for about 5 minutes, turn off heat and ready to serve!
