Everything Stew Series II
Stews are a staple addition to the African cuisine, especially in Nigeria. For the majority of folks, stews are included in all types of meals. These includes; bread and stew, rice and stew, fried yam with stew, roasted plantain (bole) and stew, amala, ewedu and stew…the list goes on! Hence, we take stew very seriously in these parts. The second stew recipe in our everything stew series is; Coconut Curry Sauce. There is just something about recipes with coconut in it. After one taste, you just have to keep coming back!
Coconut Curry Sauce Ingredients
1 coconut/ 2½ cups of coconut milk, chicken breasts, mushrooms, I red onion, ¼ green bell pepper, ½ red bell pepper, ½ yellow bell pepper, 1 teaspoon onion powder, 1 teaspoon black pepper & thyme, 1 tablespoon curry powder, 2 suppy seasoning chicken cubes & salt to taste.
Directions
Before preparing your vegetable sauce, prepare your ingredients for ease in cooking. Prepare coconut milk, slice mushrooms and shred ¼ green, red and yellow bell peppers, chop the onions. Blend ¼ of the red and yellow bell peppers with ½ of the onions; this will serve as thickener for the sauce.
Cooking time
Put the chicken breasts in a pot and turn on heat. Add thyme, onion powder, black pepper, ½ of chopped onions, 1 suppy seasoning chicken cube, and a little salt. Steam properly over medium heat for a few minutes. Add coconut milk, curry powder, cover and cook for about 4 minutes. Add the mushrooms, allow it to boil a little, then add blended and grated peppers. Add remaining suppy seasoning cube, cover and allow it to simmer for 10 minutes. Turn off heat and serve with boiled white rice, yam or any foodstuff of your choice.
