Tuscan Fish Stew
Don’t we just love Italy! From the rich cuisine, to the fine wine and good-looking men…oh! We hear someone say; ‘I need a vacation’, but hey! You can have a little bit of Italy right now through this recipe;
Ingredients: 4 large tomatoes, 1 cup fish stock, 4 Tbs. olive oil, ¼ cup sliced onions, 4 cloves garlic, ¼ cup of ground pepper (tatashe & cayenne), sea food (get about 2 different types of fish), ½ kg of shrimps, 2 Tbs. Italian spice, suppy seasoning cubes and salt to taste.
Directions: In a pan over medium heat, combine 3 Tbs. Olive oil, onions, garlic & pepper. Cook and stir until garlic & onions starts to soften. Stir in tomato paste and bring to a simmer over medium heat. Simmer stew for 10 minutes to deepen colour. Add in available seafood, suppy cube & salt, increase heat to high and cover the pan/pot. Allow fish to cook for about 10 minutes, add in Italian spice and simmer for a few minutes. Turn off heat and add in 1 Tbs. olive oil with pepper flakes as garnish. Serve with bread, rice or any food of your choice!
