Kahk al-Eid Sugar Cookies Recipe

As Ramadan concludes this weekend, Muslims shall be celebrating Eid-al Fitr to mark the end of the holy month. One delicious tradition for families this season is to bake kahk (a sugar cookie stuffed with a date or nut mixture) together. It is easy, light and perfect for any occasion; especially for they sweet-teeth!
Ingredients
2 cups semolina flour, 1 ½ cups shortening, 1 cup boiling water, ½ teaspoon salt, ¾ cup white sugar, 1 teaspoon cinnamon, 2 cups ground walnuts or dates, ¼ cup confectioners’ sugar, 2 teaspoons orange blossom water.
Directions
Pour semolina flour and salt in a bowl and add in shortening. Pour in a cup of boiling water, mix to form a solid dough and transfer to a lightly floured surface to ensure the dough is well blended. Cover the dough and allow it to stand for at least an hour. Preheat the oven to about 350 degrees and grease cookie sheets or line with parchment paper. In another bowl, mix uniformly the white sugar, ground nuts or dates, cinnamon and orange blossom water, then set aside. Knead dough again and form into a walnut sized ball, using your finger, make a hole in the center and fill the hole with the nut/date mixture. Seal dough up and place cookies at least an inch apart on the prepared cookie sheets. Bake for 10 to 12 minutes or until slightly browned.
Dust with confectioners’ sugar while still hot and serve with cold zobo drink, Kunun or any beverage of your choice! We hope we just made your weekend a little better! Have a great weekend full of many blessings!
